NIFTEM-Kundli Senior Research Fellow (SRF) Job Description

• Product Development and Characterisation: prepare composite flours and food prototypes with partially hydrolysed guar gum; conduct physicochemical and nutritional analyses.
• Analytical Techniques: perform laboratory characterisation using FTIR, DSC, GPC, solubility/viscosity tests, fibre content and prebiotic index evaluation.
• Shelf-life and Sensory Studies: conduct texture analysis, sensory evaluation (hedonic scale) and monitor shelf-life under ambient and accelerated conditions.
• In Vitro and Ex Vivo Assays: carry out enzyme inhibition assays, glycaemic index evaluation, cell culture studies (glucose uptake, insulin signalling, antioxidant activity) and intestinal loop/everted sac models.
• In Vivo Animal Studies: induction of diabetes in animal models, monitoring metabolic parameters (blood glucose, insulin, lipid profile, HbA1c), and assisting in histological and biochemical analyses.
• Documentation and Reporting: maintain detailed records of experiments, prepare data reports, and contribute to publications and project deliverables.
